Vegan Pad Thai

Ingredients

1 Pack NuPasta Fettuccine

4 tbsp Tamarind Sauce

1 tbsp Soy Sauce

2 tbsp Sugar

2 tbsp Peanut Oil

1 Green Onion, chopped

1 Garlic Clove, chopped

½ Onion, sliced

½ cup Tofu

½ Bell Pepper, sliced

1 small Carrot, sliced

¼ cup Peanuts

⅓ cup Bean Sprouts

Cilantro, for garnish

½ Lime, for garnish

Directions

  • Drain, rinse and pan fry 1 pack of NuPasta Fettuccine for 2-3 minutes. Set aside.
  • In a bowl, combine tamarind sauce, soy sauce and sugar, mix well and set aside
  • In a pan, fry half of the green onion, onion, tofu, pepper and carrot for 4-5 minutes
  • Add NuPasta and sauce mixture, stir well and pan fry for another 8-10 minutes
  • Serve and garnish with remaining green onion, peanuts, lime, bean sprouts and cilantro
