Bacon & Eggplant Alfredo

Ingredients

1 Pack NuPasta Fettuccine

2 oz Cream Cheese

2 tbsp Butter

¼ cup Heavy Whipping Cream

1 Clove Garlic, minced

¼ cup Grated Parmesan Cheese

½ cup Eggplant, diced

2-3 strips Bacon

Fresh Parsley, to garnish

Salt and Pepper, to taste

Directions

  • Drain, rinse and pan fry 1 pack of NuPasta Fettucine for 2-3 minutes. Set aside.
  • Saute bacon and eggplant until cooked through. Set aside.
  • Add cream cheese, butter, and heavy whipping cream to a saucepan over medium heat.
  • Add in salt, pepper, garlic and parmesan cheese.
  • Whisk until combined.
  • Add bacon and eggplant into the sauce.
  • Toss in NuPasta and heat for an additional 1 minute.
  • Plate and sprinkle with parsley.
